Lasagna

lasagna in the toaster oven (yea I know it's dirty)

  • lots of homemade red sauce
  • homemade meatballs, chopped up
  • parmesan cheese
  • shredded mozzarella
  • ricotta
  • one egg
  • lasagna noodles (I use the no-boil kind)

Mix cheeses and egg in bowl. Mix chopped meatballs (or, if you know you're going to make the lasagna, make sure you make some mini-meatballs) into sauce. Start with a layer of noodles on the bottom over a thin layer of plain sauce, spread some cheeseon the noodles, then sauce+meatballs, then more noodles, and so on. Sprinkle top with parmesan and a bit of mozzzarella- try not to drown it!- and bake for appropriate time (check box of lasagna noodles).

The secret is the egg... and the cheese portions. I try not to use too much cheese else it's just a cheesy soggy mess. My lasagna stands up to the test. Also, when I serve this to my family, I usually add some frozen veggies into the sauce (I heat the sauce if I do that). I reserve a little sauce without any meat or veggies in it to pour on the top. Yummy!!!
